Preparation
- Wash the fir buds well and clean them of any impurities, then dry them on a towel. They must be dried thoroughly, otherwise the remaining water could cause the syrup to ferment.
- Place the fir buds in layers in a jar and pour honey over them. Continue until the jar is full.
- Close the jar and leave to macerate for 2-4 weeks at room temperature.
Every few days it is a good idea to shake the jar to homogenize the extract. You will notice, day by day, how the honey changes consistency and becomes thinner/fluid. - After maceration, strain the syrup and store it in glass containers (jars, bottles, not very large).
- Keep the syrup tightly closed in a dark and cool place (cool pantry or refrigerator).
If unopened, the syrup can keep for up to 1 year without any problems. - Once opened a bottle of syrup must be kept in the refrigerator. After opening, it should be consumed within 14 days.
Observations
To make the syrup from fir buds, you can use both buds and young fir twigs. It is recommended to collect them in mountainous areas, as remote and unpolluted places as possible.
The fir buds should be as young as possible, raw green in color and no more than 1-2 cm long.
The use of fresh buds is essential to obtain a good quality honey fir syrup.
