Linden honey borrows from the healing properties of linden flowers and is ideal for calming the emotions, being prescribed for nervous system disorders, insomnia, fatigue and stress.

Lime honey has a very strong linden aroma, is golden-yellow in color with greenish tints and has a uniform, fluid and viscous or crystallized consistency. It remains fluid until the autumn, when at low temperatures it crystallizes with large crystals (it is butter-like), with a significant amount of pollen in the sediment. After crystallization, the colour becomes whitish and the taste more velvety.

Contraindications and precautions

  • Anyone can consume lime honey except diabetics.
  • Consumption of lime honey is contraindicated for people allergic to bee products due to the high pollen content.
  • Avoid putting it in food at temperatures above 45°C as honey will discharge hydroxymethylfurfural - a toxic compound. Also, enzymes and vitamins C and B1 are destroyed at temperatures above 40°C, so bees honey loses most of its nutrients.

Did you know...?

  • Lime honey can crystallize over time, but this is a natural process of honey and does not affect its quality. To decrystallize, place the jar in a container of warm water and make sure the temperature is no higher than 40°C.
